That’s why I’m so excited to share this go-to snack recipe. Inspired by my dear friend Toni from Feed Me Momma, these medjool dates stuffed with nut butter, wrapped in dark chocolate, sprinkled with sea salt + freeze-dried raspberries are simple to make, nourishing, and utterly delicious.

Why medjool dates make the perfect snack base

Medjool dates are naturally sweet + chewy, making them a fantastic alternative to processed sweets. They’re rich in fibre, potassium, magnesium + antioxidants, which support digestion, heart health + energy levels. Their natural sugars provide a gentle energy boost without the dreaded crash.

The nut butter twist: peanut vs. cashew

I usually use peanut butter for this snack, but cashew butter is another amazing option. Both nut butters add a creamy texture and are packed with healthy fats, protein + vitamins like E + B-complex. These nutrients help keep you feeling full + satisfied, balancing the sweetness of the dates.

The magic of dark chocolate + sea salt

Melting dark chocolate to wrap these little bundles adds a luscious, rich flavour with health benefits like antioxidants + mood-enhancing compounds. Adding a sprinkle of sea salt (shoutout to my friend Lauren for the tip!) perfectly contrasts the sweetness + enhances the chocolate’s depth.

Final touch: freeze-dried raspberries

How to make your medjool date nut butter treats

Ingredients:

  • Pitted medjool dates (makes it easier!)

  • Nut butter (peanut or cashew)

  • Dark chocolate (70% cacao or higher)

  • Sea salt

  • Freeze-dried raspberries

Method:

  1. Pit the medjool dates if they aren’t already pitted.

  2. Slice each date (not all the way through).

  3. Stuff with a generous spoonful of your favourite nut butter.

  4. Melt the dark chocolate gently until smooth.

  5. Dip each stuffed date in the melted chocolate, ensuring full coverage.

  6. Place chocolate-coated dates on a parchment-lined tray.

  7. Sprinkle a pinch of sea salt + freeze-dried raspberries on top.

  8. Freeze for at least 30 minutes to set.

  9. Store in the freezer and remove a few minutes before enjoying.
